Korean BBQ Burger

Before the Meat-eating Military Man leaves for a work trip, I try to make sure his last meal is really delicious and satisfying. It’s so he’ll remember to come home. No, that’s not the real reason. ;) It’s because I know he won’t eat the best meals on a ship.

This time, I made something new–a Korean BBQ Burger. The ground beef is mixed with all the ingredients that are used to marinate Korean BBQ Beef (thinly sliced rib eye). The result is winning the “best wife award.” Oh, and a juicy burger that has all the flavors of one of the most popular dishes in Korean cuisine.

The Meat-eating Military Man absolutely loved this burger. He said it was one of the best burgers he had ever eaten. Mighty compliment.


I was not lying about juicy. He loved it so much, he didn’t put it down.

To ensure he wasn’t the only one enjoying Korean BBQ flavors in a burger form, I made a tofu burger for myself.

Korean BBQ Tofu Burger

Next time we eat these, I’m going to try to top the patties with some pickled daikon, cucumber or kimchi. And, top it with siracha sauce.

Even if your spouse isn’t leaving for a work trip aboard a ship, you should still make these burgers. And, with carnivore- and vegetarian-friendly recipes, everyone will be pleased. Happy weekend!

Korean BBQ Beef Burger: (makes 4 patties)

Ingredients:

  • 1 to 1.5 lbs ground beef (I had 1.2 lbs ground beef)
  • 4 Tbsp mixture of minced garlic and minced ginger (equal parts each)
  • 3 Tbsp soy sauce
  • 3 Tbsp white sugar
  • 3 Tbsp scallion, finely minced
  • 2 tsp sesame seeds
  • 1/4 tsp red pepper flakes
  • burger buns
  • toppings of your choice

Directions:

  1. Mix the ground beef, garlic and ginger mixture, soy sauce, white sugar, scallion, sesame seeds and red pepper flakes in a bowl.
  2. Shape into 4 equal sized patties ensuring the center of the patties are thinner or indented so the patties will cook evenly throughout without a bulging center.
  3. Let sit for 10 minutes.
  4. Cook on grill or stove!
  5. Enjoy!

Korean BBQ Tofu Burgers: (makes about 6)
*disclaimer: I wasn’t planning to make these so only had silken tofu, which didn’t work as well as it should have. The other ingredients should be right, but I’m going to revisit this. If it’s too try, add an egg. If too wet, more bread crumbs.

Ingredients:

  • 1 package (14 or 16 oz) extra firm tofu
  • 1 large egg, beaten (don’t have to beat if using a food processor)
  • 1/2 c. bread crumbs
  • 3 Tbsp mixture of minced garlic and minced ginger (equal parts)
  • 2.5 Tbsp soy sauce
  • 2.5 Tbsp white sugar
  • 3 Tbsp scallion, minced
  • 2 tsp sesame seeds
  • 1/4 tsp red pepper flakes
  • burger buns
  • toppings of your choice

Directions:

  1. If you have a food processor, combine the tofu, egg, bread crumbs, garlic and ginger mixture, soy sauce, white sugar, scallion, sesame seeds and red pepper flakes. Pulse until mixture is well combined. If you don’t have a food processor, finely chop the tofu and set aside. Then, beat the egg. Combine all the ingredients and stir well breaking down the tofu as much as possible.
  2. Shape into patties of desired size.
  3. Heat oil in a skillet and cook on each side until browned.
  4. Enjoy!
