Combine all the rub ingredients in a small bowl.
Generously season the prime rib with the rub on all sides. Let it rest in the refrigerator for about an hour.
Preheat the Pit Boss grill to 250°F. Place the prime rib in the smoker with the temperature probe.
Let the prime rib cook until internal temperature reaches to 130°F.
Once the internal temperature reaches 130°F, increase the heat to 400°F and let it cook until internal temperature reaches 140°F. This will sear the outer coating.
Take the prime rib out of the smoker and let it rest for 20-30 minutes. The internal meat temperature will continue to rise for a few degrees. Target meat temperature is around 140°F to 145°F which is medium doneness.
