4large russet potatoes

Preparing the Potatoes
Preheat your Traeger grill to 350°F (180°C). This will take about 15 minutes, during which time you can prep your potatoes.
Wash the potatoes thoroughly under running water to remove any dirt. Pat them dry with a kitchen towel.
Using a fork, poke several holes all around each potato. This helps the steam escape during cooking and prevents the potatoes from bursting.
Rub each potato with olive oil and sprinkle with pepper and salt. The oil and seasoning will enhance the flavor and crisp up the skin.
Smokin' the Potatoes
Once your Traeger grill is preheated, place the potatoes directly on the grill grates.
Close the lid and let the potatoes cook for about 1 hour. You'll know they're done when you can easily insert a fork into the center, and the skin is crispy.
While the potatoes are cooking, prepare the toppings: shred the cheddar cheese, crumble the cooked bacon, chop the green onions, and snip the fresh chives.
Assembling and Serving
Carefully remove the cooked potatoes from the grill using grill tongs. Be cautious, they'll be hot!
Let the potatoes cool for a few minutes, then slice each potato lengthwise down the middle, creating a little pocket for the toppings.
Load 'em up! Stuff each potato with shredded cheddar cheese, a dollop of sour cream, a generous sprinkling of crumbled bacon, and a handful of chopped green onions and fresh chives.
