Preheat Your Traeger: Fire up your Traeger pellet grill and set it to 225°F (107°C). Allow it to preheat while you prepare the sweet potatoes.
Clean and Dry the Sweet Potatoes: Give those sweet potatoes a good wash under cold water. Use a brush to scrub off any dirt. Then, pat them dry with a kitchen towel.
Season the Sweet Potatoes: Drizzle each sweet potato with about half a tablespoon of olive oil, making sure to coat them evenly. Next, sprinkle on the freshly ground black pepper and kosher salt. If you want to add extra flavor, now's the time to sprinkle on optional seasonings like garlic powder, paprika, or a hint of cinnamon.
Smoking the Sweet Potatoes
Prepare for Smoking: Place a sheet of aluminum foil on the grill grates to catch any drips. This will make cleanup a breeze.

Check the Internal Temperature: After about 2 hours, start checking the sweet potatoes' internal temperature. You're aiming for around 205°F (96°C) for that perfect sweet potato doneness. Use a meat thermometer to check it. The sweet potatoes will be tender and easily mashable at this temperature.
