Instructions
Prepping the Wings
Start by rinsing the chicken wings under cold water. Pat them dry with paper towels to ensure they're not too wet.
Place the dried wings in a large bowl. Drizzle olive oil over them and sprinkle with 1 tablespoon of salt, 1/2 tablespoon of black pepper, and the optional cayenne pepper. Toss the wings to coat them with the seasoning evenly. Let them sit while you prepare the smoker.
Fire Up the Smoker
Fire up your smoker and set it to a temperature range between 225-250°F. Add your choice of wood chips according to the smoker's instructions to create that delicious smoky flavor.
While the smoker heats up, prepare the smoker rack by lightly greasing it with cooking spray to prevent the wings from sticking.
Smoking the Wings
Once your smoker has reached the desired temperature, place the seasoned wings on the prepared smoker rack. Arrange them evenly to ensure even cooking.
Close the smoker lid and let the wings smoke for about 1.5 to 2 hours. Make sure the internal temperature of the chicken reaches 165°F.
Making the Garlic Parmesan Sauce
