Preparing the Pork Chops
Start by preparing the pork chops. Rinse them under cold water and pat them dry with paper towels. This helps the seasoning adhere better.

Rub the seasoning mixture evenly over both sides of the pork chops. Make sure to press it in to create a flavorful crust. Place the seasoned chops on a plate and let them sit at room temperature while you prepare the grill.
Preparing the Z Grill
Fire up your Z Grill and preheat it to around 225-250°F (107-121°C). Ensure you're using the appropriate wood pellets (hickory or applewood) for that fantastic smoky flavor.
Smoking the Pork Chops
Once your grill reaches the desired temperature, it's time to get smokin'! Place the seasoned pork chops directly on the grill grates. Make sure to leave some space between the pork chops for even cooking.
Close the lid and let cook. Smoke the pork chops for approximately 1.5 to 2 hours. Keep an eye on the grill's temperature to maintain that steady smolder.
Checking for Doneness
Use a meat thermometer to check the internal temperature of the pork. They should reach 145°F (63°C) for safe consumption. Insert the thermometer into the thickest part of the chop without touching the bone.
Once the chops reach the desired temperature, remove them from the grill. Don't forget to let them rest for a few minutes to allow the juices to redistribute.
