Puerto Rican potato and carrots beef stew recipe
Use adobo seasoning to season the beef.
Place olive oil in a large pot and heat it using medium heat. Add the meat gently and stir the occasionally until you notice it turning brown. This should take about 10 minutes.
Next, take the garlic, onion, and pepper and add them to the pot and cook for about 5 minutes. During this time, make sure that you stir several times. Continue this way until you notice the vegetables starting to soften.
After the 5 minutes are over and you are sure that the vegetables are soft enough, add the following: vinegar, sauce, and Sofrito. Allow these ingredients to cook for 2 minutes as you continue to stir the mixture. Add water, Sazon, and beef bouillon and ensure that they mix well. Allow the mixture to boil. After it has boiled well enough, lower the heat and simmer for about 60 minutes. After the one hour period, the meat will have become tender.
You now need to add potatoes and carrots to the stew. Boil it. Add salt if desired. Monitor the stew to make sure that it doesn't dry up. If it happens to dry, add some water. Check out that you don't add a lot of water so that the stew remains thick. Lower the heat, cover the stew, and switch to a simmering mode for around 45 minutes. After the 45 minutes are over, both the vegetables and meat should be tender.
Next, add Alcaparrado and stir gently. Uncover the stew. Allow it to simmer for 5 more minutes. Check the stew to make sure that it is thick. If it is not yet thick, wait until it thickens well enough.
Taste the stew to check whether there is enough salt and, if need be, add the desired amount.
Serve the stew with rice and enjoy a tasty meal.
