In your slow cooker, combine chicken, soy sauce, brown sugar, crushed pineapple, red bell pepper, salt, and pepper. Give everything a good stir to ensure the ingredients are evenly distributed throughout the mixture.
I set my slow cooker to the high setting and let it cook for 4 hours.
Once finished cooking, carefully took out the chicken from the slow cooker and placed it on a plate to set aside.
In a small bowl, combine cornstarch and cold water. Whisk the mixture together until a thick slurry forms.
