Prepping the Steaks
Take the filet mignon steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This ensures even cooking.
In a small bowl, mix together the olive oil, kosher salt, black pepper, and garlic powder to create a flavorful seasoning paste.
Rub the seasoning paste all over the steaks, making sure to coat them thoroughly. Let the seasoned steaks rest for 5 minutes to allow the flavors to penetrate.
Preparing the Grill
Fire up your Pit Boss pellet grill or any grill with temperature control. Set the temperature to 225°F for a slow and steady cooking process.
Add your favorite wood pellets to the grill's hopper. I recommend apple or cherry wood pellets for a gentle smoky flavor that won't overpower the steak.
Once the grill reaches the desired temperature, it's time to sear the steaks for that beautiful crust! Increase the grill temperature to the highest setting (around 500°F).
Searing the Steaks
