Instructions
Preparing the Potatoes
Start by firing up your smoker or grill. Set the temperature to around 225°F (about 107°C). While it's heating up, it's time to prepare your potatoes.
Wash and peel the four large Russet potatoes. Once they're clean, chop them into chunks, about 1-inch in size. This helps them cook evenly.
In a small saucepan, melt the half-stick of butter over low heat. Stir in the salt and garlic powder. Your kitchen should already be filled with a delightful aroma!
Place the potato chunks on a large sheet of heavy-duty aluminum foil. Pour the melted butter mixture over the potatoes. Now, wrap the foil tightly around them, sealing it securely. This will be your smoky potato package.
Smoking the Potatoes
With your smoker or grill at the right temperature, it's time to introduce those potatoes to some smoky magic. Place your foil-wrapped potato package directly on the grill grates.
Cover the smoker or grill, and let the potatoes smoke for about an hour. You'll know they're done when they're fork-tender and have that beautiful smoky flavor.
Mashing and Serving
Once your smoked potatoes are done, carefully remove the foil package from the grill. Be cautious; it's gonna be hot!
Unwrap your potatoes, and transfer them to a large mixing bowl. Use a potato masher or a fork to start mashing them until they're nice and creamy.
Pour in 1/4 cup of heavy cream and continue mashing. The cream will add that luxurious, velvety texture.
Taste the mashed potatoes and adjust the seasoning if needed. Add more salt or freshly ground black pepper for that extra zing.
Once your smoked mashed potatoes are smooth and creamy, it's time to serve them up. Top with some freshly chopped chives for a burst of color and flavor.
Plate them alongside your favorite grilled meats, smoked chicken, or whatever your heart desires. Get ready to watch your guests' faces light up with joy!
