4bonelessskinless chicken breasts
4slicesof Swiss cheese
4slicesof ham
2tablespoonsDijon mustard

Instructions
Preparing the Chicken
Begin by rinsing the chicken breasts under cold water and pat them dry with paper towels.
Lay each chicken breast flat on a cutting board. With a sharp knife, carefully slice horizontally into each breast to create a pocket. Be cautious not to cut all the way through.
Season both sides of the chicken breasts with a pinch of salt, black pepper, and a sprinkle of garlic powder.
Spread about half a tablespoon of Dijon mustard inside each chicken pocket.
Place a slice of Swiss cheese and a slice of ham inside each chicken breast pocket, making sure they fit snugly.
Secure the pockets closed by threading toothpicks through the edges. You can also use cooking twine if preferred.
Preparing the Smoker
If you're using wood chips, soak them in water for at least 30 minutes before using.
Preheat your charcoal or electric smoker to approximately 225°F (107°C). Maintain this temperature throughout the cooking process.
Smoking the Chicken
Once the smoker is at the right temperature, remove the wood chips from the water and place them in the smoker box.
Carefully place the stuffed chicken breasts on the smoker grates. Close the smoker lid.
Smoke the chicken for 2-3 hours or until the internal temperature of the chicken reaches 165°F (74°C) on a meat thermometer. Make sure to insert the thermometer into the thickest part of the chicken without touching the filling.
Finishing and Serving
Once the chicken reaches the desired temperature, carefully remove it from the smoker and place it on a cutting board.
Allow the smoked chicken to rest for a few minutes before removing the toothpicks or twine.
Slice the smoked Chicken Cordon Bleu into thick, juicy portions.
