Ingredients
2½lbsYukon Gold potatoescubed
1medium yellow oniondiced
3clovesgarlicminced
4cupslow-sodium chicken broth
8strips thick-cut bacon
3tablespoonsbacon fat
3tablespoonsflour
1can evaporated milk
1cupsharp cheddar cheesegrated
½cupsour cream
Saltpepper, thyme to taste
Instructions
Cook bacon until crispy; reserve 3 tablespoons fat
Add potatoes, onion, garlic, broth, and seasonings to slow cooker
Cook on LOW 6-8 hours until potatoes are tender
Mash half the potatoes for texture
Make roux with bacon fat and flour; add evaporated milk
Stir roux and chopped bacon into soup; cook on HIGH 20-30 minutes
Add cheese and sour cream; adjust seasoning
Serve topped with bacon, cheese, and green onions
