Instructions
Prepping the Chuck Roast
Preheat your oven to 325°F (163°C).
Mix garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper in a bowl.
Rub the chuck roast generously with the seasoning mix.
Heat vegetable oil in the Dutch Oven over medium-high heat.
Sear the chuck roast on all sides until it develops a beautiful golden-brown crust. Set aside.
The Veggie Tango
In the same Dutch Oven, toss in carrots, potatoes, onions, and minced garlic.
Season with salt and pepper to taste.
Let them dance around for a couple of minutes, soaking up the flavors left by the roast.

Pour in the beef broth and red wine (if using) into the Dutch Oven.
Bring the liquid to a simmer, scraping up any flavorful bits stuck to the bottom.
