Prepare the Salmon
Rinse the salmon fillets under cold water and pat them completely dry with paper towels. Dry salmon is key to a good sear.
Use a sharp knife to cut the salmon into 1-inch cubes, ensuring uniform size for even cooking.
Season the Salmon
