Instructions
Prepare the Marinade
In a medium bowl, whisk together the olive oil, lemon juice & zest, garlic, thyme, Dijon mustard (if using), honey (if using), red pepper flakes, and black pepper.
Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Ensure each piece is evenly coated.
Marinate for at least 30 minutes or up to 24 hours in the refrigerator for maximum flavor.
Prepare the Grill
Preheat the grill to medium-high heat (around 400°F).
Lightly oil the grill grates to prevent sticking.
Grill the Chicken
Remove the chicken from the marinade, letting excess drip off. Pat dry with a paper towel for the best sear.
Season both sides of the chicken with salt just before grilling.
Place the chicken on the grill and cook for 5-6 minutes per side, flipping once.
Check for doneness using a meat thermometer—the thickest part should read 165°F.
Remove from the grill and let the chicken rest for 5 minutes before slicing.
