4fresh halibut fillets6-8 oz each
For the Marinade:
¼cupolive oil
Juice of 2 lemons
3clovesgarlicminced
2tablespoonsfresh parsleychopped
1tablespoonfresh basilchopped
1tablespoonfresh thyme leaves
Salt and pepper to taste

Preparing the Marinade
Mix the olive oil, lemon juice, minced garlic, chopped parsley, basil, thyme, salt, and pepper in a mixing bowl. Whisk it all together until well combined.
Marinating the Halibut
Place the fresh halibut fillets into a zip-top plastic bag or an airtight container.
Pour the prepared marinade over the fillets, ensuring they are completely coated. Seal the bag or container and refrigerate for at least 30 minutes. You can marinate it longer for a more intense flavor, up to 2 hours.
Preparing the Grill
Preheat your grill to medium-high heat (about 400°F/200°C). Clean the grill grates with a grill brush to prevent sticking.
Grilling the Halibut
Take the marinated halibut fillets from the refrigerator and let them sit at room temperature for about 10 minutes.
Carefully oil the grill grates to prevent sticking. You can do this by dipping a folded paper towel in vegetable oil using tongs and then brushing it on the grates.
Place the halibut fillets on the grill, skin-side down. Close the lid and grill for approximately 4-5 minutes. This will give you beautiful grill marks and nicely seared skin.
Gently flip the fillets using tongs and continue grilling for another 4-5 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Serving Your Grilled Halibut
Carefully remove the grilled halibut fillets from the grill and transfer them to a serving platter.
Garnish with lemon wedges and some extra fresh herbs for a pop of color and flavor.
