Ingredients
5piecesPork Chops(at least 1 inch thick)
¼cupOlive Oil
Your favorite pork rub(or you can use my simple pork rub;read below)
Rub
¼cupBrown Sugar
¼cupChile powder
2tablespoonKosher Salt
Instructions
Preheat the smoker to 250°F and add your favorite wood pellets.
If you are using your own favorite rub, go ahead and season the pork chops. Or you can make my simple pork rub by mixing chile, brown sugar, and salt in a small bowl. Generously cover the pork chops with the rub mixture.
Oil the smoker rack and place the pork chops in the smoker and let it cook for about 2 hours or until internal temperature reaches 145°F.
Once the pork chops are done cooking, fire up your grill on medium high heat for direct grilling. Brush the pork chops with olive oil and grill for 2 to 3 minutes on each side. This will give it more flavor and crust on the pork chops.

*You can also brush the pork chops with your favorite BBQ sauce during grilling.
