4bonelessskinless chicken thighs (about 1.5 lbs)
1can20 oz pineapple chunks in juice (not syrup)
1red bell peppersliced
1small onionsliced
3clovesgarlicminced
1tablespoonfresh gingergrated
⅓cuplow-sodium soy sauce
2tablespoonhoney
1tablespooncornstarchoptional for thickening

Prep the Chicken: Season the chicken thighs with salt and pepper on both sides. Set aside while you prepare the rest of the ingredients.
