How to spatchcock a chicken

Peri Peri chicken is a popular dish throughout the world. It is often cooked in a traditional way, where the bird is laid flat, but spatchcocked gives it a whole new flavor and texture. The technique involves cutting through the backbone and spine of the bird, so that the chicken can be opened like a book. This not only makes cooking and eating peri peri chickens much easier, but also creates an incredibly succulent and flavorful bird.

There are a few different techniques for spatchcocking a chicken, but the most common is to use a pair of kitchen shears to cut along both sides of the backbone, then pull out the spine. If you don’t have kitchen shears, you can use a sharp knife.
