6-8fresh jalapenos

Prep Work
Fire up your smoker and preheat it to around 225°F. While it's heating up, let's move on to the next step.
Wash the jalapenos thoroughly. Use a spoon to scoop out the seeds and membranes, leaving behind the hollow jalapeno halves. Thinly slice the jalapenos. Set them aside for now.
In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Give it a good stir until it's well mixed and creamy. This is gonna be the delicious filling for our pork balls!
Stuff and Form the Pork Balls
Take a small handful of seasoned pork and flatten it out in the palm of your hand.
Place some cheese and a slice of jalapeno in the center of the pork.
Gently fold the pork around the cheese and jalapeno, forming a ball. Make sure the filling is completely enclosed by the pork.
Sprinkle your favorite BBQ rub generously over each pork ball. Get those flavors all mixed in there real good!
Time to Smoke
Once your smoker is up to temp, carefully place your pork balls on the grill grates. Close the lid and let 'em smoke away for about 2-3 hours, or until they reach an internal temperature of 160°F. This is where the magic happens, folks!
Serve and Enjoy
Once those pork balls are done smokin', it's time to dig in! Carefully remove them from the smoker and serve 'em up hot off the grill. Be sure to have plenty of napkins on hand, 'cause things are about to get messy (in the best way possible)!
