Ingredients
1pounddried mixed beanskidney beans, black beans, navy beans
1large oniondiced
4clovesgarlicminced
1cupketchup
½cupmolasses
¼cupbrown sugar
2tablespoonsmustard
2tablespoonsapple cider vinegar
Salt and pepper to taste

Instructions
Prep and Soak the Beans
Rinse the dried beans under cold water and remove any debris or stones.
Place the beans in a bowl and fill them with water. Allow them to soak for at least 8 hours or preferably overnight. This helps to soften the beans and reduce cooking time.
Preheat the Grill and Sauté the Aromatics
Preheat your Pit Boss grill to 250°F and adjust the vents to maintain a steady temperature.
Heat a cast iron skillet on the grill and add a drizzle of oil.
Sauté the diced onion and minced garlic until they are soft and translucent, about 5 minutes. Remove from heat and set aside.
Prepare the Sauce
In a bowl, combine the ketchup, molasses, brown sugar, mustard, and apple cider vinegar. Stir until well mixed.
Optional: Add a splash of hot sauce for extra heat, or stir in diced bacon for added flavor.
Combine and Smoke
Drain and rinse the soaked beans, then transfer them to a large aluminum foil pan or cast iron skillet.
Add the sautéed onions and garlic to the beans, then pour the sauce over everything. Stir until the beans are evenly coated.
Season with pepper and salt to taste.
Smoke the Beans
Place the pan of beans on the preheated grill and close the lid.
Let the beans smoke for about 1 hour, stirring occasionally, until they are tender and the sauce has thickened to your liking.
Serve and Enjoy
Once the beans are done, remove them from the grill and let them cool slightly.
Serve the smoked baked beans hot as a side dish to your favorite BBQ meats, burgers, or hot dogs.
